Rockin’ Rolls

Ingredients:
2 C. warm water
2 packets (4 1/2 t.) active dry yeast
1/2 C. sugar
1 egg lightly beaten
6 1/2 C. bread flour
1/2 stick (1/4 C.) butter, melted
1 1/2 t. salt

  1. Stir water, yeast, sugar, egg, & half of the flour together in a mixing bowl.  Let sit 5-10 min. until it looks swampy.  Add remaining flour, salt, & melted butter.  Stir until you have shaggy dough, adjusting amount of flour as needed.
  2. Place dough on counter & knead until springy & smooth (7-10 min.)  Rinse mixing bowl clean w/ hot water, dry it & put dough in.  Cover dough w/ a clean kitchen towel & let it rise until doubled, about 1 hour.
  3. Punch down dough.  Form dough into rounds a little larger than a walnut.  Place the rolls two inches apart on a greased baking sheet.  Cover w/ kitchen towel, & let rise until doubled, about 45 min.

Bake at 350 degrees for 18-22 min.

Egg-in-a-cup

Ingredients:
Bread slices for each person
Cooked bacon slice
Egg for each person
Butter

Butter the bread and place buttered side down in each of the cups in a muffin pan. Cook a few strips of bacon. Place the cooked bacon inside each bread cup. Crack an egg into the center of the bread cup. Bake at 350 degrees for 20 minutes.

-Can beat eggs w/ cheese, meat, salt and spices and then fill cups.

French Toast, Honey Style

Ingredients:
2 eggs
1/4 C. milk
1/4 C. honey
1/4 t. salt
6-8 slices of bread
butter

Beat the eggs with a whisk. Add milk, honey, and salt and stir until blended together. Melt a little butter in the frying pan over medium heat. Dip bread slices into the egg mixture and place them in the pan. Cook until golden brown.

Morning Cake

Ingredients:
1/3 C. of melted butter
1 C. molasses
1 egg
1 C. orange juice
2 1/2 C. whole wheat flour
1 t. baking soda
1 t. cinnamon
2 t. powdered ginger
1/2 t. salt
1/2 C. raisins

Grease a 9 x 9 baking pan. Preheat oven to 350 degrees. In a large bowl, mix the butter and molasses with an electric mixer. Beat in the egg and then the orange juice. In a medium bowl, stir together ingredients and then add the raisins. Stir everything together. Pour the batter into the pan and bake for 40 minutes. To be sure the cake is done, stick a toothpick into the center of the cake. If the toothpick comes out dry, then the cake is done. If there is wet batter on the toothpick, bake the cake for another 3 minutes and check again.

Egg in a Hole

Ingredients:
1 slice of bread
1 egg

Make a hole in the center of the bread using an upside-down glass. Place the bread in a slightly greased frying pan. Crack the egg into the hole and allow to cook. (Can also scramble the egg w/ cheese etc.)
